Papas con Salsa de Maní


Ingredients


475 grams Large Potatoes, well washed and peeled

2 Chicken Stock Cubes

10 Milliliters Sunflower Oil

62 grams Peanut Paste

64 Milliliters LA LECHERA Semi-Skimmed Milk

70 grams Red Onion, diced into small cubes

Let's Cook!


Cook the Potatoes


1. In a large pot, place the potatoes and enough water to cover them. Bring to a boil and add the Chicken Stock Cubes, dissolving them well. Cook until the potatoes are soft.

Prepare the Peanut Sauce


2. Heat the oil in a pan and lightly sauté half of the diced onion. Add the peanut paste and LA LECHERA Semi-Skimmed Milk, and cook until the sauce slightly thickens. If it's too thick, add a bit of the potato cooking water. Remove from heat immediately.

Combine the Preparations


3. Drain the cooked potatoes and reserve the liquid for another use. Place the potatoes in a serving dish and cover them with the peanut sauce. Finally, sprinkle some diced red onion over the sauce. Serve immediately as a side dish.
