Seco de Pollo Sencillo


Ingredients


5 Units Chicken Thighs and Legs
30 Milliliters Sunflower Vegetable Oil
4 grams Annatto Oil
150 grams Pearl Onions
10 grams Garlic
3 grams Ground Cumin
80 grams Red Bell Pepper
320 grams Tomato
2 Chicken Stock Cubes
100 Milliliters Beer
250 Milliliters Naranjilla Juice
24 grams Fresh Chili Pepper
10 grams Fresh Parsley

Let's Cook!


Prepare the Ingredients


1. Chop the onion, garlic, red bell pepper, and tomato into small cubes. Clean the chicken and prepare the spices.

Prepare a Sauté


2. Place the vegetable oil and annatto oil in a large pot, and once it's hot, add the onion and garlic. Then, add the ground cumin, chopped red bell pepper, and chopped tomato. Cook until the tomato starts to break down.

Cook the Chicken


3. Add the chicken pieces, let them cook briefly, and then pour in the beer, Naranjilla juice, and 2 cups of water. Finally, dissolve the Chicken Stock Cubes once the liquid is hot. Cook until the sauce thickens slightly.

Serve
